I'm needing some alone time with this Chicken Enchilada Casserole.
I've been craving Mexican food for a few days now, so I was skimming through Pinterest the other night and I saw this and I knew I had to get it in my belly soon and very soon.
And I knew I needed to have it with tortilla chips.
When you know, you know.
It. Is. DELICIOUS. Grant loved it too.
Chicken? Good. Rice? Good. Corn? Good. Enchilada Sauce? Good. CHEESE? GOOD.
I did 2 things differently: I only used half of the refried beans (I'm not a huge fan and didn't want them to overwhelm me) and I used brown rice. It's all I had in the pantry. I am 1000% certain that I it would've been even more amazing had I used white rice.
And now we have leftovers for days. Hooray!
